The Hispanic College Fund has opened student
applications for its 2010-2011 scholarship season. More than $2 million
will be awarded in scholarships to more than 500 deserving Hispanic
students from the United States
and Puerto Rico. To qualify for the
scholarships, undergraduate and graduate students must maintain a 3.0
out of 4.0 GPA; be a U.S. citizen or permanent resident residing in the
United States or Puerto Rico; be enrolled full-time at an accredited
university for the 2010-2011 school year; and must demonstrate
financial needs. Applications will be open until February 16, 2010. For

The 6th Annual Houston Latino Book &
Family Festival will take place at the George R.
Brown Convention Center the
weekend of December 13-14. Under the direction of award-winning

Christmas wouldn’t be Christmas without
Postres Navideños. A traditional Christmas dessert in Spain and Italy,
Turrones are also popular in other parts of the Hispanic world
(especially Cuba).
From Arabic origins, turrones are made based on almonds and honey,
and many come from a small Spanish town called Jijona. However, if
you are up for the challenge, this year we invite you to make your
own Turrón.

Ingredients
3 cups of almonds
6 egg whites
1 cup of honey
1 cup of granulated white sugar
thin/sweet butter wafers – chocolate work too

Directions
1. Boil the granulated sugar in ˝ cup of water over medium heat, until it
thickens slightly. Remove the pan from the heat; add the honey; and mix
well.
2. Blanch the almonds in boiling water. Peel the skins from the almonds,
toast them, and grind them finely.
3. Beat the egg whites until stiff; add the ground almonds; and stir in
the honey and sugar combination. Mix well.
4. Put the entire mixture over low heat; cook stirring constantly until
it forms a ball when a small portion of the mixture is dropped in a cup
of cold water. This takes approx. 20-25 min.
5. Line the bottom of a lightly greased 9x13 pan with wafers, then cover
and fill the paste. Cover the top of the paste with more wafers and let
it dry for several days in a cool place for 3-4 days, as the mixture
needs to harden like fudge.
6. Cut before serving. Approximately 30 squares.
